Ingredients

  • 8 cups goats milk I use raw goats milk but you can use store bought goat or cows milk.
  • 4 tbsp plain yogurt or 1/4 tsp of yogurt culture

Equipment

  • 1 wooden spoon
  • 1 candy thermometer
  • 1 candy thermometer1 large stainless steel pot
  • 2 large canning jars
  • 1 thick towel

Method

  1. Heat milk to 180 Fahrenheit, stirring frequently so the milk doesn't stick to the bottom of the pot.
  2. Cool the milk to 115 Fahrenheit by placing the pot in a sink of cold water.
  3. Stir in the plain yogurt or yogurt culture.
  4. Ladle milk into jars. Wrap jars in a thick towel and place in the over with the oven light on. Leave in the over for 8 to 12 hours.
  5. Remove from oven and store in the refrigerator.

Notes

To sweeten the yogurt, add honey to taste.  I use 1/2 tsp of honey to 1 cup of yogurt. You may also add fruit or berries to flavor the yogurt.  I use frozen berries or fruit.  I thaw, mash and then add them to the yogurt and honey.
